  1. Combine all ingredients in blender.

Notes

Guilt-Free Homemade Chocolate

Ingredients

  • 4 Tablespoons raw cacao powder
  • 2 Tablespoons coconut oil, melted
  • 2 Tablespoons cacao butter, melted
  • Stevia or other sweetener of your choice to taste

Directions

  1. In a double boiler, melt the cacao butter and coconut oil slowly at a low temperature. You don't want the temperature of the cacao butter and coconut oil to be more than 110 degrees.
  2. Remove from heat.
  3. Add sweetener of choice to taste.
  4. Add cacao powder and stir until it gets thick and is well blended.
  5. Pour into any flat container or chocolate molds and put in refrigerator to harden.
  6. Once hard, break into pieces or remove from molds and store in a covered container in the refrigerator.

Notes

For added variety, try sprinkling some some seeds, nuts, or dried fruit on top of the chocolate before putting it in the refrigerator to harden.

Mild Taco Seasoning – gluten free

It seems that most prepackaged taco seasoning contains either gluten or some MSG derivative. However, making up your own taco seasoning is quick and easy and lets you control exactly what ingredients go into it. The recipe below can be used with 1 pound of ground meat. Simply brown the meat, drain the fat, add the taco seasoning and 3/4 to 1 cup of water, and bring to a simmer for 5 minutes. If you frequently use taco seasoning, why not make up a large batch to keep in your pantry in an air-tight container? Use 3 to 4 tablespoons of taco seasoning for each pound of meat. You can add more or less seasoning mix to suite your individual taste.

  • 1 Tablespoon cornstarch
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 3/4 teaspoon salt
  • 2 teaspoons minced onion
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground oregano
  • 1/4 teaspoon sugar, optional
  • 1 teaspoon tomato powder

Directions

  1. Combine all ingredients.
  2. Brown 1 pound of ground meat and drain the fat.
  3. Add taco seasoning and 3/4 to 1 cup of water and bring to a simmer for 5 minutes.

Because corn is a commonly genetically modified organism, it is best to buy organic cornstarch. Also be sure to order some tomato powder too as it is difficult to find in grocery stores.

Chia Pudding

If you are looking for a delicious yet healthy dessert option, then you must try some chia seed pudding. If you are the adventurous type, try adding some nuts, berries, or even a little raw cacao powder for an even more flavorful option. The chia pudding in the picture below was blended in the blender to give it a thick yet smoother consistency than simply letting it sit in the refrigerator overnight.   • 3 Tablespoons chia seeds
  • 3/4 to 1 cup almond or coconut milk (use the lesser amount for a thicker consistency)
  • 1 teaspoon vanilla extract
  • 1 Tablespoon maple syrup
  • 1/2 teaspoon cinnamon

Directions

  1. Combine all ingredients.
  2. Depending on the consistency you desire, you can either blend the ingredients in a blender for a smoother pudding or just cover and chill overnight for a consistency more like tapioca.

Notes

You can substitute some stevia for the maple syrup if you prefer.
